Port Wine Cobbler

1 table-spoon gum syrup

An ingredient commonly used in mixed drinks. Like bar syrups, it is a sugar and water mixture, but has an added ingredient of gum arabic which acts as an emulsifier.

Portuguese fortified wine from the Douro Valley in the northern provinces of Portugal. It is typically a sweet red wine, but also comes in dry, semi-dry and white varieties. It is often served as a dessert wine.

A thin eight-ounce glassful fine ice, one table-spoonful gum-syrup, one jigger port wine. Mix well. Ornament with fruit. Serve straws.
