3 dash absinthe

Ingredient: absinthe

What it is:  Spirit
An anise-flavored spirit derived from herbs, including the flowers and leaves of the herb Artemisia absinthium (wormwood). Absinthe traditionally has a natural green color but can also be colorless. Although absinthe was vilified, no evidence has shown it to be any more dangerous than ordinary spirits.

3 dash pepsin bitters

Ingredient: pepsin bitters

What it is:  Bitters

Defunct bitters no longer available. One source suggests that pepsin bitters might have contributed to the flavor and name of Dr Pepper, an American soft drink.

Substitution:  Angostura bitters

1 jigger French vermouth

Ingredient: French vermouth

Also Known As:  Dry vermouth, White vermouth What it is:  Vermouth

Fortified wine, flavored with aromatic herbs and spices ("aromatized" in the trade) such as cardamom, cinnamon, marjoram and chamomile.

Substitution:  vermouth

A mixing-glass half-full fine ice; add three dashes absinthe, three dashes pepsin bitters, one jigger French vermouth. Shake well, strain, and serve.
