Morning Glory Fizz

In all first-class barrooms it is proper to have the whites of eggs separated into an empty bottle, provided you have a demand for such a drink, and keep them continually on ice, and by doing so, considerable time will be saved; mix as follows:
1 egg

Ingredient: egg

What it is:  Additive
Bird eggs are a common food and one of the most versatile ingredients used in cooking and have long been used in drinks. Usually used to add consistency and foam, egg whites and yolks are usually separated with "silver" indicating the white and "golden" the yolk. Modern chicken eggs are much larger, so use the smallest ones available.

3/4 table-spoon sugar

Ingredient: sugar

What it is:  Additive
Many 19th century recipes specifically called for white sugar, which is more refined and preferred over browner sugars. But modern white sugar is probably too refined, making raw cane sugar the best, easily available choice.

Common name for Citrus limon.

2 to 3 dash lime

Ingredient: lime

What it is:  Fruit

A number of different fruits (generally citruses), both species and hybrids, which have their origin in the Himalayan region of India, and which are typically round, green to yellow in color, 3–6 cm in diameter, generally containing sour and acidic pulp.

3 to 4 dash absinthe

Ingredient: absinthe

What it is:  Spirit
An anise-flavored spirit derived from herbs, including the flowers and leaves of the herb Artemisia absinthium (wormwood). Absinthe traditionally has a natural green color but can also be colorless. Although absinthe was vilified, no evidence has shown it to be any more dangerous than ordinary spirits.

What it is:  Additive
The new general availability of ice in the mid 1800s revolutionized bar-tending and drinking. Ice was delivered in blocks that then had to to be broken, crushed, picked and shaved for increasingly popular individual drinks (as opposed to large punches).

1 wine-glass Scotch whisky

Ingredient: Scotch whisky

Also Known As:  Scotch What it is:  Whiskey
Whisky made in Scotland, divided into four distinct categories: single malt, vatted malt (also called "pure malt"), blended and single grain. Malt whisky must contain no grain other than malted barley and is traditionally distilled in pot stills. Older recipes typically call for strong, smokey single malt Scotch. By the early 1900s blended Scotch was more often used.

(Use a large bar glass)

Shake up well with a shaker; strain it into a good sized bar glass; fill up the balance with Syphon Selters or Vichy Water, and serve.

The above drink must be drank as soon as prepared so as not to lose the effect and flavor. The author respectfully recommends the above drink as an excellent one for a morning beverage, which will give a good appetite and quiet the nerves. (See Illustration, Plate No. 7.)
