preserved ginger

Also Known As:  stem ginger What it is:  Additive
Ginger that has been peeled and then cooked and preserved in a sugar syrup. One recipe: 1 lb.. fresh gingerroo, 1 1/2 cups water & 1lb.b sugar. (1) Rinse scrubbed & peeled root pieces & let stand in cold water overnight. (2) Drain, place in kettle with cold water to cover. Boil. Skim out the ginger, repeat 2x, or until ginger is tender. (3) In a separate pan, boil sugar & water together for 10 minutes to make syrup. Add in drained ginger, bring to boil. Remove from heat, let stand overnight. (4) Put into clean, hot jars and seal.
