Ale Sangaree

1 tea-spoon sugar

Ingredient: sugar

What it is:  Additive
Many 19th century recipes specifically called for white sugar, which is more refined and preferred over browner sugars. But modern white sugar is probably too refined, making raw cane sugar the best, easily available choice.

Ubiquitous chemical substance that is composed of hydrogen and oxygen and is essential for all forms of life -- also a component of all drinks.

1 large bar glass ale

Ingredient: ale

What it is:  Beer

Ale is a type of beer brewed from malted barley using a top-fermenting brewers' yeast.

(Use large bar glass.)

Fill up the balance with Ale, grate a little nutmeg on top and serve.

It is customary to ask the customer if he desires Old, New or Mixed Ale; if he desires New Ale, you must prevent the foam from running over the glass; attention must also be paid to the temperature of the Ale, so as to have it not too cold or too warm.
