Gin Sour

1 table-spoon sugar

Ingredient: sugar

What it is:  Additive
Many 19th century recipes specifically called for white sugar, which is more refined and preferred over browner sugars. But modern white sugar is probably too refined, making raw cane sugar the best, easily available choice.

1 wine-glass gin (Jenever)

Ingredient: gin (Jenever)

Also Known As:  Holland gin, , Dutch gin, Genever What it is:  Gin

Also called Holland Gin or Genever, it is a juniper-flavored and strongly alcoholic traditional liquor of the Netherlands, Belgium and Northern France, from which gin evolved.

1/4 lemon

Ingredient: lemon

What it is:  Fruit
Common name for Citrus limon.

(Use small bar glass.)

The gin sour is made with the same ingredients as the gin fix, omitting all fruits, except a small piece of lemon, the juice of which must be pressed in the glass.

The Santa Cruz sour is made by substituting Santa Cruz rum instead of gin. In making fixes and sours be careful and put the lemon skin in the glass.
