What it is:  Whiskey

American rye whiskey, must be distilled from at least 51 percent rye. Canadian rye whisky, may or may not include rye, so long as it possesses the aroma, taste and character generally attributed to Canadian whisky it may legally be labeled "rye". Rye whiskey is less sweet than Bourbon whiskey.

Mixing-​glass half-​full fine ice, two dashes Peyschaud bitters, one-​half pony Eau de Vie d'Oranges, one and a half pony old rye whiskey, a piece lemon-​peel. Mix. Moisten the edge of cocktail-​glass with lemon, dip in sugar. Strain the cocktail into the prepared glass.
